What each ingredient does

Melon
Forms the bulk of the jam and carries the fruit flavour once cooked down.
Sugar
Sweetens the jam and, as it dissolves and concentrates, helps it thicken and keep.
Lemons
Add acidity that brightens the flavour and helps the jam set.
Ginger
Adds a warm, aromatic note that infuses into the syrup through the muslin bag.

The step that matters

Boiling slowly until clear. The jam must reach a concentrated sugar and acid balance to set. Stopping too early leaves it runny, while boiling too long or too hard can darken and scorch it.

Swap the melon

How well each one fits the dish's main ingredients (sugar, ginger, lemon, pepper):

  1. Limefits better
  2. Orangefits better
  3. Mangofits better
  4. Melonthe original

Fit is the average pairing score against sugar, ginger, lemon, pepper. Candidates are from the same food group and used in at least 100 recipes.
