What each ingredient does

Cucumbers
Provide the crisp, watery body that the salt and vinegar transform into pickles.
Coarse sea salt
Draws water out of the cucumber slices, firming them before pickling.
Vinegar
Acidity that preserves the cucumbers and gives the pickles their sharp, sour flavour.
Whole peppercorns
Add gentle, warm aroma to the pickling liquid.
Ginger
Adds a spicy, aromatic note that flavours the pickling vinegar.

The step that matters

Draining after the overnight salting. Salt draws moisture out of the cucumber slices. If they are not drained well, the extra water dilutes the vinegar and softens the pickles, weakening both flavour and crispness.

Swap the ginger

How well each one fits the dish's main ingredients (cucumber, vinegar):

  1. Tarragonfits better
  2. Dillfits better
  3. Peppermintfits better
  4. Gingerthe original

Fit is the average pairing score against cucumber, vinegar. Candidates are from the same food group and used in at least 100 recipes.
