What each ingredient does

Fresh leg of pork
Forms the main cut of meat that becomes tender and sliceable during long simmering.
Pickle (no. 61)
Cures the pork, seasoning it deeply and firming its texture before cooking.

The step that matters

Gradually bring the water to a boil, skimming off any scum that rises.. Starting in cold water and heating slowly lets impurities and proteins rise gradually so they can be skimmed off, keeping the broth clear. Rapid boiling churns the scum back into the liquid and can toughen the meat's surface.
