Ingredients

Directions

The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Separate the yolks and whites of the eggs.

  2. In a bowl, beat the yolks with the sugar and flavoring essence for 6 minutes until thick.

  3. Whip the egg whites until very stiff.

  4. Gently fold the whipped whites into the yolk mixture.

Cook and bake

  1. Grease an omelet pan with dissolved butter and pour in the mixture.

  2. Cook over low heat for 2 minutes.

  3. Transfer the pan to a preheated oven at 400°F (200°C) and bake for 4 to 5 minutes until risen.

Serve

  1. Slide the omelet onto a warm dish, sift sugar over it, and serve immediately.

What each ingredient does

Eggs
Whipped whites trap air for lift, and yolks provide richness and structure as the omelet sets.
Sugar
Sweetens the yolk base and helps stabilise the beaten mixture, while sifted sugar adds sweetness at serving.

The step that matters

Folding the whipped whites into the yolk mixture. Fold gently so the air trapped in the stiff whites is not knocked out. Deflated batter bakes flat and dense instead of rising into a light soufflé.
