What each ingredient does

Cauliflower
Forms the main body of the dish and becomes tender as it cooks in the water.
Coarse sea salt
Seasons the cooking water so the cauliflower takes up flavor as it boils.

The step that matters

Simmering until tender. Once the cauliflower is cooked through it begins to break apart, so reducing the heat and checking softness gently keeps the florets intact.
