Ingredients

Directions

Make the dough

  1. Sift the flour into a bowl and make a well in the center.

  2. Add the egg yolk and cold water to the well, then mix until the paste is the same consistency as butter.

  3. Add lemon juice and more water if necessary to lighten the pastry.

  4. Knead the mixture on a cool marble slab until smooth.

Laminate and fold

  1. Roll out the dough and place the butter in the center.

  2. Fold the dough over the butter, pressing the edges to seal.

  3. Roll out the dough lengthwise, fold it into thirds, and repeat this process three times.

  4. Chill the dough for 20 minutes, then roll and fold it again three times, chilling for another 15 minutes before the final roll.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Butter
Forms separate layers within the dough that puff apart when baked, giving flakiness.
All-purpose flour
Provides the structure that holds the dough together and forms the layers.
Egg yolk
Adds richness and helps bind the dough into a smooth paste.
Lemon juice
Acidity that helps tenderize the gluten, keeping the pastry light.

The step that matters

Keeping the butter cold while folding. If the butter softens and blends into the dough, it will not form distinct layers, so the pastry will not puff. Chilling between folds keeps the butter firm.
