Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Strawberries
Provide the main flavour and pink colour, and their pulp adds body to the cream.
Gelatine
Sets the liquid mixture into a firm, sliceable structure as it cools.
Thick cream
Adds fat for a rich, smooth texture and a light mouthfeel.
Custard
Adds richness and a creamy body to the set dessert.
Castor sugar
Sweetens the mixture and balances the tartness of the strawberries and lemon.
Milk
Hydrates the gelatine and adds dairy richness to the mixture.

The step that matters

Dissolve gelatin gently over low heat. Gelatine needs gentle heat to dissolve fully. Boiling can weaken its setting power, and unmelted granules leave a grainy, unevenly set cream.

Swap the lemon

How well each one fits the dish's main ingredients (milk, cream, sugar):

  1. Vanillafits better
  2. Strawberryfits better
  3. Figfits better
  4. Lemonthe original

Fit is the average pairing score against milk, cream, sugar. Candidates are from the same food group and used in at least 100 recipes.
