Potato Biscuits

Oven, in the book's wordsA gentle oven

Ingredients

Directions

The book says “a gentle oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the batter

  1. Separate the egg yolks and whites into two bowls.

  2. Beat the yolks with the fine sugar until light in color.

  3. Scrape the lemon peel into a lump of sugar, dry it, and pound it fine; mix with the yolks.

  4. Whip the egg whites until stiff and fold them into the yolk mixture.

  5. Sift the potato flour over the egg mixture and gently combine.

Bake and finish

  1. Prepare paper cases on a baking tray and fill them without overfilling.

  2. Glaze the tops with coarse sugar and bake in a 350°F (175°C) oven until golden.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Yolks and whipped whites provide structure, lift, and a light, rich texture.
Fine sugar
Sweetens the batter and helps the yolks lighten when beaten.
Potato flour
Supplies the body of the biscuit, giving a tender, delicate crumb.
Lemon
Its peel adds aroma and a fresh citrus flavor.

The step that matters

Folding the whipped egg whites into the yolk mixture. Whites hold air that gives the biscuits their lift. Folding gently keeps that air in; stirring or deflating the foam makes the biscuits dense and flat.

Swap the potato

How well each one fits the dish's main ingredients (egg, sugar, lemon, flour):

  1. Arrowrootfits better
  2. Shallotfits better
  3. Asparagusfits better
  4. Potatothe original

Fit is the average pairing score against egg, sugar, lemon, flour. Candidates are from the same food group and used in at least 100 recipes.
