What each ingredient does

Potatoes
Form the bulk of the paste and give the cheese its body and moisture.
Milk
Adds moisture and richness, helping the paste become a soft, cohesive curd.
Rennet
Enzyme that coagulates the milk proteins so the mixture sets into a curd.

The step that matters

Letting the mixture sit for the full resting time. Resting allows the rennet to coagulate the milk and the mixture to acidify and develop flavour. Cutting it short leaves the cheese soft and underdeveloped, while the season changes how quickly this happens.

Swap the caraway

How well each one fits the dish's main ingredients (potato, milk, cumin):

  1. Turmericfits better
  2. Cinnamonfits better
  3. Corianderfits better
  4. Carawaythe original

Fit is the average pairing score against potato, milk, cumin. Candidates are from the same food group and used in at least 100 recipes.
