What each ingredient does

Apples
Provide pectin and acid that help the juice set into a firm jelly.
Sugar
Sweetens the jelly and helps it set by binding water and firming the pectin network.

The step that matters

Drain the juice without pressing the pulp. Pressing the jelly bag forces cloudy particles and fine pulp into the juice, making the jelly murky. Gentle dripping keeps it clear and clean-tasting.

Swap the clove

The recipe marks clove as optional. How well each one fits the dish's main ingredients (apple, sugar, lemon, saffron):

  1. Cinnamonfits better
  2. Gingerfits better
  3. Corianderfits about as well
  4. Clovethe original

Fit is the average pairing score against apple, sugar, lemon, saffron. Candidates are from the same food group and used in at least 100 recipes.
