Salmon Pie

Ingredients

Directions

The book says “a slow oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

  1. Preheat the oven to 350°F (175°C).

  2. Make a good pie crust and place it in a pie dish.

  3. Season the salmon with coarse sea salt, mace, and nutmeg.

  4. Grease the bottom of the dish with butter and lay in the salmon.

  5. Melt butter in proportion to the size of the pie.

  6. Chop the lobster flesh and mix it with the melted butter.

  7. Pour the lobster mixture over the salmon.

  8. Cover with the pie crust and bake until golden.
