Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Lemons
Provide acidity and bright citrus flavour that balances the sugar.
Clarified sugar
Sweetens the ice and lowers its freezing point so it stays scoopable.
Grape syrup
Adds sweetness and fruity flavour while contributing to the ice's texture.
Sherry
Adds aroma and depth of flavour; alcohol also softens the frozen texture.
Preserved fruit
Adds chunks of concentrated fruit flavour and texture to the frozen base.

The step that matters

Stir in the preserved fruit only once the base is frozen. Adding the chopped fruit too early lets it sink or freeze unevenly; folding it in after the base has set keeps the pieces evenly distributed.

Swap the grape

How well each one fits the dish's main ingredients (lemon, orange, sugar, syrup, sherry):

  1. Vanillafits better
  2. Figfits better
  3. Pineapplefits better
  4. Grapethe original

Fit is the average pairing score against lemon, orange, sugar, syrup, sherry. Candidates are from the same food group and used in at least 100 recipes.
