Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point. The book gives no cooking times either; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

  1. Rinse the whitebait under cold water and pat dry.

  2. Preheat your oven to 400°F (200°C).

  3. Place the whitebait on a sheet of proper cooking paper.

  4. Add a generous amount of butter, a sprinkle of coarse sea salt, and a dash of pepper.

  5. Wrap the paper tightly around the fish and place it on a baking tray.

  6. Bake in the oven for about 10 minutes, then serve immediately in the paper.
