Ingredients

Directions

The book says “a slack oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Make the apple filling

  1. Peel, core, and quarter the apples.

  2. Place apples in a saucepan with lemon peel, water, and cinnamon.

  3. Cover and cook over medium heat until apples dissolve.

  4. Sweeten with sifted sugar and add syrup of cloves.

  5. Rub the mixture through a fine sieve and let it cool.

Assemble and bake

  1. Line a tart pan with puff pastry, fill with apple mixture, and cover with more pastry.

  2. Bake at 350°F (175°C) for about 30 minutes.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Apples
Break down into a soft pulp that forms the tart's filling.
Puff pastry
Bakes into flaky, layered pastry that encloses the filling.
Sifted sugar
Sweetens the apple mixture and balances the tartness of the fruit.
Syrup of cloves
Adds a warm, spiced aroma to the apple filling.

The step that matters

Rub the mixture through a fine sieve and let it cool. Cooked apples must be pushed fully smooth and cooled before filling, so the pulp sets evenly and does not make the pastry soggy or wet during baking.

Swap the lemon
