Plum Cake

Oven, in the book's wordsA gentle oven

Ingredients

Directions

The book says “a gentle oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

  1. Preheat the oven to 350°F (175°C).

  2. In a bowl, cream the butter until smooth.

  3. Gradually beat in the sugar until well combined.

  4. Whisk the eggs for 30 minutes, then mix them with the butter and sugar.

  5. Sift in the flour and spices, and mix until combined.

  6. Gently fold in the brandy, currants, raisins, and candied fruit.

  7. Pour the batter into a prepared cake pan.

  8. Bake for 2½ hours or until a toothpick comes out clean.
