To Preserve Quinces Whole
Ingredients
Directions
Pare the quinces very thin and round.
Place them in a well-tinned saucepan with a new pewter spoon in the middle.
Fill the saucepan with hard water and cover with the parings.
Set over a slow fire until soft and pink.
Let them cool; if the syrup is not thick, boil it again.
Transfer to jars and cover with brandy papers.
