Why it works: Pepper and nutmeg match in chemistry and in kitchens. They rank in the top 7% of all ingredient pairs, and cooks put them together in 13,015 recipes. Both carry 4'-methylacetophenone, which smells bitter almond. The science ↓

Capon Roasted with Truffles

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Pass some truffles in butter with salt, pepper, and nutmeg.

  2. Stuff the capon with the truffle mixture and sew up the skin.

  3. Wrap the capon in paper and keep it in a cool, dry place for 3-4 days.

Roast and serve

  1. Roast the capon at 400°F (200°C) for 2 hours, covered with buttered paper.

  2. Uncover it a few minutes before serving to allow it to brown.

  3. Serve with brown sauce or Perigueux sauce.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Truffles
Provide the main aroma and flavour that perfumes the capon and its stuffing.
Butter
Carries the truffle flavour and adds richness and moisture to the bird.
Capon
The main meat of the dish, which stays moist when roasted under buttered paper.

The step that matters

Uncover the capon to brown it. Roasting covered keeps the meat moist, but the skin only browns once the paper is removed. Leaving it covered until the end gives a pale bird, so timing the uncovering a few minutes before serving matters.

Swap the nutmeg

How well each one fits the dish's main ingredients (truffle, butter, pepper, sauce):

  1. Parsleyfits better
  2. Tarragonfits about as well
  3. Capersfits about as well
  4. Nutmegthe original

Fit is the average pairing score against truffle, butter, pepper, sauce. Candidates are from the same food group and used in at least 100 recipes.
