Raised Pie of Vegetables the Modern Way

Ingredients

Directions

  1. In a medium pot, combine carrots, turnips, onions, celery, lettuces, and cloves. Moisten with broth and a pinch of salt; skim and simmer gently.

  2. Once the carrots are tender, strain the liquid through a cloth and let it settle to clarify.

  3. Shape about 100 small pieces from young carrots and blanch in boiling water, then cool in cold water.

  4. Repeat with about 30 pieces of turnips.

  5. In separate pans, simmer the carrots and turnips in broth, essence, and a little sugar until firm, then reduce the liquid to a glaze.

  6. Blanch and stew the lettuces and celery with bacon fat, consommé, and skimmed fat from fowls or butter.

  7. Boil the cauliflower, green peas, and Windsor beans separately in salted water with butter until tender.

  8. Prepare asparagus tops and French beans, cutting them to the size of small carrots.

  9. Boil artichoke bottoms in water with butter, lemon juice, and a pinch of salt.

  10. Dress mushrooms with lemon juice.
