Why it works: Syrup and sugar match in chemistry and in kitchens. They rank in the top 6% of all ingredient pairs, and cooks put them together in 5,842 recipes. Both carry ethanol, which smells alcoholic, ethereal. The science ↓

Strawberry Jelly

Ingredients

Directions

Prepare the fruit

  1. Lightly crush the strawberries and mix them with the clarified syrup.

  2. Cover the mixture and let sit for 10–12 hours.

  3. Filter the mixture through a straining bag.

Make the jelly

  1. Add the clarified sugar and a little cochineal liquid when nearly done.

  2. Mix in the isinglass and lemon juice.

  3. Stir well and mold the mixture.

  4. Set the mold in ice up to the rim.

  5. Remove the mold an hour before serving to avoid cloudiness.

The flavor team

The pairs that carry this dish. Each one is judged two ways: how much their aromas overlap, and how often cooks already put them together.

    Shared aroma: ethanol (alcoholic, ethereal).

  2. Sugar + lemontop 18% of all pairs

    Shared aroma: ethanol (alcoholic, ethereal).

Sugar and lemon barely smell alike, yet cooks put them together in 53,532 recipes: they work on texture and structure more than aroma.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Strawberries
Provide the main flavour and fruit body of the jelly.
Isinglass
Gelatin-like setting agent that firms the liquid into a sliceable jelly.
Clarified sugar
Adds sweetness and helps balance the tartness of the fruit and lemon.
Lemon juice
Adds acidity that brightens the strawberry flavour.

The step that matters

Remove the mold an hour before serving. Jelly that is unmolded too early or too late can lose its clarity or shape; letting it stand briefly lets the surface warm slightly so it releases cleanly while staying clear and firm.

Swap the lemon

How well each one fits the dish's main ingredients (syrup, sugar):

  1. Vanillafits better
  2. Raisinfits better
  3. Pearfits about as well
  4. Lemonthe original

Fit is the average pairing score against syrup, sugar. Candidates are from the same food group and used in at least 100 recipes.
