Savoy Biscuit Filled with Whipped Cream

Oven, in the book's wordsA very gentle oven

Ingredients

Directions

The book says “a very gentle oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the mould

  1. Preheat the oven to 350°F (175°C).

  2. Butter a mould with clarified or sponged butter.

  3. Dust the inside of the mould with fine sugar, shaking out the excess.

Bake and fill

  1. Bake the biscuit until firm to the touch, about 1 hour.

  2. Cut off the top of the biscuit and scoop out some of the inside.

  3. Fill the cavity with Chantilly cream mixed with strawberries or your choice of flavor.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Potato flour
Provides the starch and structure that set the light, sponge-like crumb of the biscuit.
Clarified or sponged butter
Greases the mould so the delicate biscuit releases cleanly after baking.
Fine sugar
Dusted inside the mould to give the biscuit a thin, sweet, lightly browned crust.
Chantilly cream
Adds moisture, richness and a soft texture to the filling inside the baked biscuit.

The step that matters

Bake until firm to the touch. Underbaking leaves the starch-and-egg structure too wet to hold its shape when the top is cut and the centre is scooped out. Baking until set gives a sturdy shell for the cream filling.

Swap the potato

How well each one fits the dish's main ingredients (butter, sugar, cream):

  1. Potatothe original
  2. Leekfits about as well
  3. Sweet potatofits about as well
  4. Chivefits less well

Fit is the average pairing score against butter, sugar, cream. Candidates are from the same food group and used in at least 100 recipes.
