Why it works: Flour and butter are a kitchen classic. They rank in the top 12% of all ingredient pairs, and cooks put them together in 124,287 recipes. Both carry isobutyraldehyde, which smells malty, green. The science ↓

Ingredients
Directions
The book says “a very slack oven”. The 300°F (150°C) in the steps is the modern equivalent, not the book's own figure.
Make the sponge
Preheat the oven to 300°F (150°C).
Whip the egg yolks and sugar together until white and firm.
Whip the egg whites until stiff peaks form.
Fold the egg whites into the yolk mixture.
Sift the flour and starch powder.
Fold the sifted flour and starch into the batter gently with a spoon.
Grease a 6-inch by 4-inch by 1.5-inch tin.
Pour the batter into the tin.
Bake in the oven for 20 minutes.
Turn the bread out onto a wire rack immediately.
Make the syrup and finish
Once cool, cut into square pieces.
Boil sugar until it reaches a blow stage.
Remove the sugar from heat.
Strain the sugar syrup.
Add lemon juice to the sugar syrup.
Dip each piece of bread into the mixture using forks.
Place the dipped pieces on a wire rack.
Drain and dry the pieces for 30 minutes.
Trim the edges.
Serve in crimped paper.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Egg yolks
- Whipped with sugar to add richness and a tender, custard-like crumb.
- Egg whites
- Whipped to stiff peaks to trap air, giving the sponge its lift and lightness.
- Sugar
- Whipped with yolks for sweetness and structure, then boiled into the syrup coating.
- Flour
- Folded in gently to add structure so the sponge holds its shape.
- Starch powder
- Folded with the flour to soften the crumb and keep it tender.
The step that matters
Fold the egg whites into the yolk mixture. Folding gently keeps the air whipped into the egg whites. Stirring or deflating the batter causes it to lose volume and bake up dense.
