Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Raspberries
Provide the main flavour and colour, with the seeds strained out.
Cream
Adds richness and body, and its fat helps the froth hold its shape.
Sugar
Sweetens the tart raspberry flavour, to taste.

The step that matters

Frothing with the chocolate mill. Cream must be agitated enough to trap air and form a stable froth, but over-whipping turns it grainy and greasy. Stop once it holds soft peaks so the froth stays light on top of the liquid cream.

Swap the raspberry

How well each one fits the dish's main ingredients (cream, sugar):

  1. Vanillafits better
  2. Strawberryfits about as well
  3. Raspberrythe original
  4. Raisinfits about as well

Fit is the average pairing score against cream, sugar. Candidates are from the same food group and used in at least 100 recipes.
