Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Set the filling into a custard-like texture as they cook and add richness.
Butter
Adds richness and a smoother, softer texture to the filling.
Gooseberries
Provide the tart fruit flavour and pulp that forms the body of the pudding.
Crumbs from roll or naples biscuits
Absorb liquid and help thicken the filling to the right consistency.

The step that matters

Bake until set and golden. Eggs set as they heat; if the pudding is baked too long or too hot, the eggs over-coagulate and turn grainy and watery. Pull it when just set in the centre.
