What each ingredient does

Egg whites
Bind fine particles as they set, clarifying the broth into a clear consomme.
Sherry
Adds acidity and aroma to the broth.
Celery
Contributes mild vegetable flavor and crisp texture to the soup.
Leeks
Add mild onion-like sweetness and body to the soup.

The step that matters

Clarifying the broth with egg whites. Egg whites must be whisked in before heating so they can coagulate and trap cloudy particles. If the broth is stirred or boiled too hard while the egg-white raft forms, it breaks apart and the consomme stays cloudy.

Swap the celery

How well each one fits the dish's main ingredients (egg, sherry, leek):

  1. Thymefits better
  2. Nutmegfits better
  3. Capersfits better
  4. Celerythe original

Fit is the average pairing score against egg, sherry, leek. Candidates are from the same food group and used in at least 100 recipes.
