Why it works: Haddock and whiting match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 103 recipes. Both carry ethanol, which smells alcoholic, ethereal. The science ↓

Haddocks a LA Royale

Ingredients

Directions

  1. Dove and stuff the haddocks with the quenelle force-meat of whiting.

  2. Place them head to tail on a baking sheet and season with pepper and coarse sea salt.

  3. Bake the haddocks until cooked through, then allow them to cool.

  4. Cover the haddocks with a thin layer of force-meat, and arrange fillets of soles on top at a slant.

  5. Mask the heads with more force-meat mixed with pounded lobster-coral, and form eyes and mouth with truffles.

  6. Cover the haddocks with thin layers of bacon and place a buttered paper over them.

  7. About 45 minutes before serving, put the haddocks in the oven to finish baking.

  8. Just before serving, remove the paper and bacon, absorb excess grease with a clean napkin.

  9. Carefully transfer the haddocks to a serving dish, sauce them with Parisian sauce, and garnish with quenelles of lobster and truffles.
