Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Anchovies
Add a salty, savoury depth that flavours the butter.
Clarified butter
Carries the flavours and gives a rich, smooth texture.
Shrimps
Provide the main shellfish flavour and body of the spread.

The step that matters

Simmer over low heat. Low heat gently extracts flavour from the shells and anchovies into the butter without scorching the milk solids or making the butter taste burnt or bitter.

Swap the nutmeg

How well each one fits the dish's main ingredients (shrimp, butter, pepper):

  1. Parsleyfits better
  2. Garlicfits better
  3. Thymefits better
  4. Nutmegthe original

Fit is the average pairing score against shrimp, butter, pepper. Candidates are from the same food group and used in at least 100 recipes.
