Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Milk
Forms the liquid base that the custard sets from, giving it body and creaminess.
Egg yolks
Set the custard through heat, giving it a firm, smooth, rich texture.
Powdered sugar
Adds sweetness and dissolves easily into the warm milk.
Lemon rind
Adds aroma and bright citrus flavour to the infused milk.

The step that matters

Let the custards simmer until firm. Egg proteins set gently with heat. Cooking too fast or too hot can curdle or toughen the custard, so keep the water at a gentle simmer and stop once the custard is just set.
