To Dress a Spare Rib

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Preheat the oven to 400°F (200°C).

  2. Joint the spare rib well and crack the ribs across.

  3. Place the thickest end next to the grate.

  4. Dust the rib with flour.

  5. Baste the rib with butter.

  6. Rub the sage leaves through a sieve and put the rubbed sage leaves in a pepper box.

Roast and serve

  1. About 15 minutes before the meat is done, baste the rib with butter.

  2. Sprinkle the powdered sage over the rib.

  3. Serve with apple sauce and mashed potatoes.

What each ingredient does

Forms the main body of the dish and provides the meat that is roasted.
Flour
Dusted on the rib to help the surface brown and form a crust.
Butter
Basted over the rib to add fat, moisture and richness to the surface.
Sage
Adds a herbal aroma that flavours the rib as it roasts.
