Why it works: Turmeric and cumin match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 1,698 recipes. Both carry eucalyptol, which smells eucalyptus, herbal. The science ↓
A Curry
Ingredients
Directions
Heat ghee or butter in a stewpan.
Fry sliced onions until brown.
Add garlic and chillies, sauté briefly.
Mix in turmeric, coriander, cumin, cardamom, fenugreek, dry ginger, black pepper, salt, cloves, mace, and cinnamon.
If making a dry curry, grind the spices with a little water to form a paste.
Add meat or fowl, stirring until the gravy is absorbed.
For a gravy curry, cut meat or fowl into slices and add to the mixture.
Cook until the desired consistency is reached.
