Lobster Pie

Ingredients

Directions

The book gives no oven temperature. The 300°F (150°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the lobster

  1. Boil the lobsters.

  2. Remove the tails and cut the lobsters in half.

  3. Take out the gut and divide each half into four pieces.

  4. Place the lobster pieces in a small dish along with the claw meat.

  5. Clear the body of furry parts and extract the substance.

Make the sauce

  1. Pound the spawn and shells in a mortar.

  2. Stew the spawn and shells with water, vinegar, pepper, salt, and mace.

  3. Add butter rolled in flour, boil, and strain into the dish.

Bake and serve

  1. Sprinkle bread crumbs over the mixture.

  2. Cover with pastry.

  3. Bake at 300°F (150°C) until the crust is done.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Lobsters
Provide the main meat that forms the body of the pie.
Butter
Adds richness and fat, and with flour thickens the strained sauce.
Flour
Combined with butter, it thickens the sauce so it binds lightly.
Vinegar
Adds acidity that sharpens the flavour of the stewed shell and spawn sauce.

The step that matters

Stewing and straining the spawn and shells. Boiling the butter and flour into the sauce must be done gently and then strained, so the flour thickens smoothly without lumps and the sauce stays free of shell fragments.

Swap the mace

How well each one fits the dish's main ingredients (lobster, vinegar, pepper, butter, flour, bread):

  1. Tarragonfits better
  2. Parsleyfits better
  3. Capersfits better
  4. Macethe original

Fit is the average pairing score against lobster, vinegar, pepper, butter, flour, bread. Candidates are from the same food group and used in at least 100 recipes.
