Hot Raised Pies of Larks
Ingredients
Directions
The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.
Bone the larks.
Prepare the pie crust.
Place the farce in the bottom of the crust and lay the larks over it.
Fill the pie with more farce and close it, leaving a small hole at the top.
Bake in a 400°F (200°C) oven until light brown.
Remove from the oven and take off the top crust.
Drain any fat and pour a financiere ragout into the pie.
Serve hot with high seasoning.
Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.
