Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Codfish
Provides the main savoury flavour and body of the balls.
Potatoes
Bind the mixture and give it a soft, mashable texture.
Egg
Binds the mixture so the balls hold their shape when fried.
Butter
Adds richness and moisture to the mashed mixture and helps the frying browning.
Cream or rich milk
Adds moisture and softness to the mashed mixture.

The step that matters

Drain the water thoroughly before mashing. Excess water dilutes the mixture and makes the balls soft and hard to shape. Draining well keeps the mash firm enough to form balls that hold together in the hot fat.

Swap the potato

How well each one fits the dish's main ingredients (egg, butter, cream, flour):

  1. Leekfits better
  2. Chivefits better
  3. Asparagusfits about as well
  4. Potatothe original

Fit is the average pairing score against egg, butter, cream, flour. Candidates are from the same food group and used in at least 100 recipes.
