Stewed Clams

Ingredients

Directions

Prepare the clams

  1. Wash the clams thoroughly and place them in a large pot with ½ cup of hot water.

  2. Heat the pot over the fire until the shells open.

  3. Remove the clams, cut off the inedible fringe with clean scissors, and place them in a saucepan with the broth from the pot.

Make the stew

  1. Boil the clams slowly until tender, then season with white pepper.

  2. Thicken the gravy with flour mixed into melted butter.

  3. Alternatively, boil 1 pint of milk with a dash of white pepper and a small pat of butter.

  4. Add the clams to the milk, bring to a boil, and serve immediately.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Round clams
Provide the main protein and the savory flavour of the stew.
Flour
Thickens the butter and broth into a smooth gravy.
Butter
Adds richness and carries the flour to thicken the gravy.
Milk
Forms the creamy base of the alternative stew.

The step that matters

Boil the clams slowly until tender. Gentle heat keeps clam meat from toughening and shrinking, while still cooking it fully. Rapid boiling makes the texture rubbery and can dry the meat out.

Swap the white pepper

How well each one fits the dish's main ingredients (clam, flour, butter, milk):

  1. Nutmegfits better
  2. Cinnamonfits better
  3. Jalapenofits better
