Veal Stew

Ingredients

Directions

Prepare the stew

  1. Wash the veal and place it in a stewpan with 2 quarts of water.

  2. Bring to a boil and skim off any scum.

  3. Add salt, pepper, and a small piece of butter.

  4. Add the halved potatoes to the stewpan.

Make the dumplings and finish

  1. In a bowl, mix the eggs, cream or milk, a little salt, and enough flour to make a batter thicker than pancake batter.

  2. Drop spoonfuls of the batter into the boiling stew.

  3. Cover the pan tightly to prevent steam from escaping.

  4. Boil for 20 minutes and serve in a deep dish.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Veal
Provides the meat and rich flavour that the stew is built around.
Eggs
Bind the batter so the spoonfuls hold their shape while cooking.
Flour
Thickens the batter so it stays in spoonfuls rather than dispersing in the stew.
Irish potatoes
Starch that softens during boiling and adds body to the stew.

The step that matters

Drop the batter into the boiling stew. The batter must be thicker than pancake batter and the stew must be at a full boil. This sets the outside of each spoonful quickly so it holds its shape instead of dissolving into the liquid.

Swap the potato

How well each one fits the dish's main ingredients (veal, pepper, butter, egg, cream, flour):
