Roast Mutton

Ingredients

Directions

Prepare

  1. Trim off inedible parts of the mutton and wash it well.

  2. Dry with a clean cloth.

  3. Place the mutton in a roasting pan.

  4. Add a little water for initial basting.

Roast

  1. Roast for about 12 minutes per pound in a strong fire.

  2. Do not salt the meat initially to prevent it from hardening.

  3. Salt it after it begins to roast well.

  4. If it browns too quickly, cover it with a sheet of white paper.

  5. Baste often.

  6. Lightly dredge with flour about 15 minutes before it's done.

  7. Baste with butter.

Finish and serve

  1. Skim the gravy.

  2. Thicken slightly with brown flour before serving.

  3. Serve with currant jelly or other tart sauce.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Mutton (in the method)
Provides the meat that is roasted until tender and browned.
Butter
Adds fat and flavour to the surface while basting, promoting browning.
Flour
Dredged over the surface near the end, it helps form a browned crust.
Currant jelly or other tart sauce
Adds acidity that cuts the richness of the roast mutton.

The step that matters

Salting the meat after it begins to roast. Salting too early can draw out moisture and toughen the surface, so the meat is salted only once it is already roasting well.
