Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cauliflower
Forms the crisp, bite-sized body of the pickle that absorbs the vinegar brine.
Hot vinegar
Provides the acidity that preserves and sharpens the pickle while carrying the spices.
White sugar
Balances the sharp acidity of the vinegar with sweetness.
French mustard
Adds sharp, pungent flavour that blends into the pickling liquid.
White mustard seeds
Contribute a mild, earthy pungency to the spiced brine.

The step that matters

Pour the vinegar over the cauliflower, ensuring it is fully covered, and seal tightly.. Cauliflower pieces left above the liquid can spoil and stay pale and soft. Full submersion in acidic brine keeps the pickle preserved and evenly flavoured, and sealing limits contact with air.

Swap the cauliflower
