Ingredients

Directions

The book says “a slow oven”. The 300°F (150°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Preheat the oven to 300°F (150°C).

  2. Mix the chopped apricots with ½ cup sugar and the beaten egg yolk.

  3. Fill the pie crust with the apricot mixture.

Bake and top

  1. Bake the pie.

  2. Remove the pie from the oven.

  3. Let it stand for 2-3 minutes.

  4. Beat the egg white and add 2 teaspoons sugar to prepare the meringue.

  5. Spread the meringue over the pie.

  6. Return the pie to the oven until the meringue is golden brown.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Apricots
Provide the main fruit flavor and moisture for the filling.
Egg yolk
Helps thicken the apricot filling as it bakes.
Egg white
Whipped into foam to form the meringue topping.
Sugar
Sweetens the filling and helps stabilize the beaten egg white meringue.

The step that matters

Spread the meringue over the pie. The meringue should touch the crust edges so it seals and does not shrink or weep during baking. Egg white needs sugar added as it is beaten so the foam stays stable and glossy.
