What each ingredient does

Ripe peaches
Provide the fruit flavor and most of the body of the butter.
Sugar
Sweetens the butter and helps it thicken as the liquid cooks off.

The step that matters

Stirring during the slow boil. As water evaporates, the fruit and sugar concentrate and can scorch on the bottom of the kettle. Frequent stirring spreads the heat and keeps the butter from burning.
