Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Flour
Mixed with butter into a paste that thickens the liquid into a gravy.
Butter
Forms a paste with flour and adds richness to the sauce.
Cream
Adds richness and a smooth, mellow texture when stirred in off the heat.
Calf's head
Provides the main meat, whose gelatin gives the finished sauce body.

The step that matters

Stir in the cream without boiling. Boiling cream can cause it to split or turn grainy and oily, so it should be stirred in off the heat once the sauce is thickened.
