Why it works: Nutmeg and mace are a kitchen classic. They rank in the top 4% of all ingredient pairs, and cooks put them together in 6,557 recipes. Both carry myristicin, which smells spice, warm. The science ↓
Tench Pie
Ingredients
Directions
The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.
Preheat the oven to 350°F (175°C).
Grease the bottom of a dish with butter.
Grate nutmeg over the butter, then add pepper, coarse sea salt, and mace.
Place the tench in the dish and cover with more butter.
Pour in red wine and a little water.
Cover with a lid and bake until done.
Once out of the oven, pour melted butter mixed with rich gravy over the pie.
Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.
