Another Method of Making Mince Pies

Ingredients

Directions

  1. In a large pan, mix the shredded meat, chopped raisins, currants, chopped pippins, sugar, mace, cloves, and nutmegs together.

  2. Add the brandy and salt, and mix well.

  3. Transfer the mixture to a stone pot and cover it tightly. It will keep for three to four months.

  4. To make the pies, line a dish with a thin crust.

  5. Layer the meat mixture, followed by a layer of thinly sliced citron, then another layer of mince meat, and finally a layer of thinly sliced orange peel.

Flavor stand-ins for the mace

How well each one fits the dish's main ingredients (meat, raisin, currant, sugar, clove, nutmeg, brandy):

  1. Cinnamonbetter flavor fit
  2. Allspicebetter flavor fit
  3. Cardamombetter flavor fit
  4. Macethe original

Fit is the average pairing score against meat, raisin, currant, sugar, clove, nutmeg, brandy. Candidates are from the same food group and used in at least 100 recipes. This compares flavor only: it does not check the job the ingredient does in the dish (bulk, moisture, acidity, structure).
