Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Apples
Provide the pectin and body that let the juice set into a jelly.
Powdered loaf sugar
Sweetens the jelly and helps it set firm when boiled.
Lemon juice
Adds acidity that brightens flavour and supports pectin setting.
Egg whites
Bind to fine particles and rise to the top, helping clarify the jelly.

The step that matters

Straining until clear. Egg whites and the jelly bag remove cloudiness; rushing this step leaves the jelly hazy. Repeated straining gives a clear, bright set.

Swap the apple

How well each one fits the dish's main ingredients (sugar, lemon, egg, orange):

  1. Vanillafits better
  2. Limefits better
  3. Blueberryfits better
