Gooseberry or Apple Trifle

Ingredients

Directions

  1. Scald the gooseberries or apples until soft.

  2. Pulp the fruit through a sieve to create a thick layer at the bottom of your dish.

  3. If using apples, mix in the grated lemon rind.

  4. Add sugar to the fruit mixture to taste.

  5. In a separate bowl, gradually mix the milk with the rice flour, stirring continuously.

  6. Strain the mixture into a stew-pan and heat over medium heat, stirring until it boils.

  7. Remove from heat and let cool until half cold.

  8. Stir in the brandy and noyeau or ratafia.

  9. Spread the custard over the fruit layer in the dish.

  10. Whip the cream with the egg white and sugar until frothy.

  11. Spoon the whipped cream over the custard, creating a high mound.

  12. Garnish with colored comfits on top.
