Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Bake the trout

  1. Preheat the oven to 400°F (200°C).

  2. Prepare the trout and place it in the oven to bake, basting every 5 minutes.

  3. Once done, transfer the trout to a dish.

Sauce and finish

  1. Reduce the sauce if necessary, then mix in the anchovy butter and lemon juice.

  2. Pour the sauce over the trout and sprinkle with fine baked bread-crumbs.

  3. Return the trout to the oven for 5 minutes.

  4. Serve with a border of lobster croquettes.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sherry
Reduces into the sauce base, concentrating flavour and adding acidity and sweetness.
Anchovy butter
Adds savoury depth and richness to the sauce, rounding out the fish.
Lemon juice
Adds acidity that brightens the sauce and balances the richness of the butter.
Baked bread-crumbs
Form a dry crust on top that browns in the oven and adds texture.
Lobster croquettes
Provide a rich, crisp-fried contrast alongside the tender trout.

The step that matters

Basting the trout every 5 minutes. Regular basting keeps the surface moist as the fish cooks, so the flesh stays tender and does not dry out before the sauce is added.
