Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Fresh-boiled prawns or shrimps
Provide the main body and sweet flavour of the dish.
Clarified butter
Carries the flavour and keeps the shrimps moist and rich, and its surface layer seals the pots.
Anchovies
Add savoury depth and salty umami that rounds out the shellfish flavour.

The step that matters

Simmering until nearly cold. Tossing the shrimps over low heat gently warms them through without toughening the protein. Stopping while they are nearly cold keeps the texture tender and prevents the butter from separating or the shrimps from overcooking.

Swap the nutmeg

How well each one fits the dish's main ingredients (shrimp, butter, pepper):

  1. Parsleyfits better
  2. Garlicfits better
  3. Thymefits better
  4. Nutmegthe original

Fit is the average pairing score against shrimp, butter, pepper. Candidates are from the same food group and used in at least 100 recipes.
