Croustade Op Bread, Garnished with Calves’-tattv

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Fry the croustade in hot hog's lard until light fawn color.

  2. Carefully remove the inside crumb and cover the cavity with a thin layer of quenelle force-meat.

  3. Bake the filled croustade in a 400°F (200°C) oven for 5 minutes to cook the force-meat.

  4. Keep the croustade hot until served.
