What each ingredient does

Crayfish
Provide the main flavour and body of the bisque.
Butter
Carries the aromatic vegetables and adds richness to the frying base.
White wine
Adds acidity and aromatic depth as it reduces into the broth.
Strong consommé
Forms the liquid base that the bisque simmers in.

The step that matters

Frying the minced vegetables in butter. Cooking the vegetables slowly in butter softens them and draws out their sweetness and aroma. Rushing this step or letting them brown too much leaves the bisque flat or bitter.
