Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg whites
Whipped whites attract impurities and clarify the broth as they set and rise.
Sherry
Adds acidity and a warm aroma to the broth.
Leeks
Soften during boiling and add mild onion-like sweetness to the soup.
Celery
Softens during boiling and adds a fresh, savory flavor to the soup.

The step that matters

Clarifying the broth with egg whites. Whipped egg whites must be folded into cold broth and then brought slowly to a boil. As they heat, they trap fine particles and rise as a raft, which is then strained off. Stirring or boiling too hard early breaks up the raft and leaves the broth cloudy.

Swap the leek

How well each one fits the dish's main ingredients (egg, sherry, celery, pepper):

  1. Capsicumfits better
