Ingredients

Directions

The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Make the batter

  1. Beat the eggs until thick and smooth.

  2. Gradually add the powdered sugar while mixing.

  3. Stir in the grated lemon peel and juice, and add the rose-water.

  4. Beat the mixture vigorously.

  5. Gently fold in the potato flour or wheat flour.

Fill and bake

  1. Prepare small square or oblong paper cases and butter the cases.

  2. Fill the cases with the mixture without overfilling.

  3. Sprinkle loaf sugar on top.

  4. Bake immediately in a 400°F (200°C) oven until done.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Whipped to trap air, giving the biscuit its light, airy structure.
Powdered sugar
Sweetens the batter and helps it become smooth and stable when beaten with the eggs.
Potato flour
Forms the light crumb structure once gently folded in, with little gluten to toughen it.

The step that matters

Fold in the flour gently. Folding keeps the air beaten into the eggs. Vigorous stirring after the flour goes in deflates the batter and produces a dense, flat biscuit.

Swap the potato

How well each one fits the dish's main ingredients (egg, sugar, lemon, rose, butter):

  1. Arrowrootfits better
  2. Sweet potatofits better
  3. Asparagusfits about as well
  4. Potatothe original

Fit is the average pairing score against egg, sugar, lemon, rose, butter. Candidates are from the same food group and used in at least 100 recipes.
