Black Puddings
Ingredients
Directions
In a pan, heat the half-cooled fat and onions.
Add the cream, season with salt and spices, and stir over moderate heat until creamy.
Mix in the squares of fat.
Clean and soak the pig’s intestines, then fix a tin funnel in one end.
Fill the intestines with the mixture, being careful not to crack them.
Securely tie the ends of the filled intestines.
Plunge them into a pot of hot water and poach.
Drain the puddings on a cloth, rub with a piece of skin, cover, and let cool.
When ready to serve, broil the puddings over a clear fire.
